The Old Hickory Boning Knife has a 6.13-inch carbon steel blade at 10.75 inches overall and a brown wood handle.

A boning knife is ground narrow and slightly flexible so it follows bone and joints rather than cutting straight through them, which is what leaves meat on the plate instead of the carcass. The narrowness is the point. A wide blade cannot get between a rib and the meat around it, and a stiff one cannot follow the curve.

Carbon steel takes a keener edge than stainless and comes back on a stone with little effort, which matters on a blade worked against bone all day. The trade is that it darkens with use and will spot if left wet, so it needs to be dried straight after washing. Explore more Kitchen Knives.
