The Old Hickory Paring Knife has a 3.25-inch carbon steel straight back blade at 6.75 inches overall and a brown wood handle.
A paring knife is the small in-hand knife of a kitchen, used off the board for peeling, coring and trimming, and the straight back gives a flat spine the thumb can press against for control. Carbon steel takes a keener edge than stainless and comes back on a stone with little effort, which matters on a blade used for fine work several times a day.
