The kiridashi is a Japanese marking and carving knife, ground on one side only with a long angled tip. That single bevel lets the blade ride flat against a straightedge or a board, cutting a line exactly where it is placed rather than drifting. Woodworkers, leatherworkers and joiners use it for scribing, paring and detail cuts where a double-bevel blade would wander.
