Description

The Gatco Fine 500 Grit Diamond Sharpening Hone is the finishing step in a diamond progression for Gatco's clamp-guided kits. Gatco built it to give a polished edge in the final stage of sharpening. Use it after the coarse and medium hones have set the bevel.

Diamond cuts faster than natural or ceramic stones and handles hard modern steels that can glaze a conventional stone. A diamond surface also stays flat through years of use, so it keeps giving an even bevel. The fine surface refines the edge so it slices cleanly through paper, rope and food.

Gatco's guided kits clamp the knife in place and use a guide rod attached to the hone, so every stroke meets the edge at the same angle. You set the angle by placing the guide rod in a slot on the clamp, then work the hone along the edge in smooth strokes. Holding one angle from stroke to stroke is what produces a clean, consistent bevel instead of a rounded edge. For an even higher polish, finish with Gatco's 1200 grit ceramic hone.
