The Flexcut Pro Series Carving Knife has a 1.625-inch 1095 carbon steel blade at 7.25 inches overall with a flat grind and a wood handle. Made in the USA.

A flat grind runs the bevel in a straight line from the blade's flat to the edge, with no hollow behind it. On a carving knife that puts steel directly behind the cutting edge, which is what keeps it from chipping out mid-cut on hard or figured wood. The short blade puts the hand close behind the edge where the control is, and the long handle gives leverage to push a cut through.
