The Cold Steel Commercial Series Fillet has a 6-inch mirror-finished 4116 stainless blade and a black Kray-Ex handle over a Zy-Ex core. Made in Taiwan.

The handle is the interesting part. A rigid Zy-Ex core has the strength while a softer Kray-Ex outer layer takes the grip, and that outer surface is food-safe, which matters on a knife that spends its life against raw fish. 4116 is a German stainless used widely in commercial kitchens, chosen for corrosion resistance and easy resharpening rather than maximum edge holding. On a fillet knife that trade is the right one, since the edge gets touched up constantly.
