8Cr13MoV is a Chinese stainless roughly equivalent to AUS-8, and its virtue is being forgiving. It sharpens back quickly on almost any stone, resists rust without attention, and costs little enough that the knife stays affordable. Stonewashing tumbles the blade so it arrives already textured. The scratches that any working knife collects then blend into the finish instead of standing out the way they would against a mirror polish. G10 is fiberglass cloth cured in resin, dimensionally stable in heat, cold and damp, and far more resistant to cracking than the molded plastic often fitted at this price.
