The Rite Edge Harvest Fruit Knife has a 4.625-inch stainless spear blade in alabaster composition handles, closing to 5.75 inches, with a black nylon belt sheath.
A fruit knife is ground thin and given a symmetrical spear point, so it parts skin and flesh cleanly rather than crushing, and the point works into a core or a stone without tearing. At 5.75 inches closed this is a large folder for the job, which puts it closer to an orchard or field tool than a table knife.
Alabaster composition imitates the pale stone it is named for, giving a bright handle that will not yellow or crack the way real ivory-substitute plastics of the past did. I am not a fan of stainless steel knife blades. BUT, I liked the blade length and shape. For the price, I bought it to take apart to make a fixed blade decorative decoy carving knife. Undercutting some feather groups in soft wood. If you bought the knife for purposes described and know how to put an edge on a knife, you’ll like it. Factory edge sucked. Knife is as described. I have 0 complaints. I may buy another to make a “spike shave” type tool with. Blade is heavy enough for the job.
