Description
The Old Hickory 5 Piece Kitchen Set has carbon steel blades with brown wood handles, covering an 8-inch slicer, a 7-inch butcher, a 6-inch boning knife and two paring knives at 4 and 3.25 inches.
The five cover a kitchen between them. The slicer handles roasts and bread, the butcher breaks down larger cuts, the boning knife follows joints and ribs, and the two paring knives take the small work at two different sizes. Old Hickory blades have been made in Olean, New York since the 1920s, and the line has barely changed: plain carbon steel, plain wood, riveted through.
Carbon steel takes a keener edge than stainless and comes back on a stone with little effort, developing a dark patina that most cooks leave alone since it slows further rust. The trade is that these want drying straight after washing rather than sitting wet in a rack. Explore more Kitchen Knives.
