Green River Works is one of the oldest names in American cutlery, supplying trade knives to trappers and traders from the 1830s, and the plain sculpted wood handle belongs to that lineage rather than to modern design. High carbon stainless splits the difference between the two families, holding an edge better than plain stainless while resisting the rust a carbon blade would pick up on wet fish.
