The Taper Grind edge is Chicago Cutlery's own, thinning the blade progressively from spine to edge rather than grinding a single bevel at the end. That leaves less material to push through meat, so the knife parts a steak instead of tearing it. It also means the edge can be brought back on a steel rather than needing a stone, which matters on knives used at a table several times a week.
