The Spyderco K04SBL Serrated Utility Kitchen Knife is the blue-handled version of the K04, with the same 6.38-inch serrated stainless blade. Many cooks use handle colors to keep knives separate for different foods, and blue is often set aside for fish and seafood. Like the black model, it is made in Japan. Its blade length is right between a paring knife and a full bread knife.
The serrated edge handles crusty rolls, ripe tomatoes, peppers, and fruit with thick skins. Stainless steel stands up to regular rinsing and acidic foods without staining. The polypropylene handle is easy to sanitize and holds well in a wet hand. Spyderco's serration pattern keeps cutting well long after a plain edge would need attention.
It is a practical size for a boat galley or camp kitchen as well as a home kitchen. Wash it by hand and dry it before putting it away. A ceramic rod can touch up the serrations when they eventually dull. Use a wood or plastic cutting board to protect the serration points. It also makes a handy steak or carving knife at the table.
